Dreaming of a tropical escape? The Virgin Piña Colada is the perfect way to sip sunshine without the alcohol. Blended with creamy coconut milk, sweet pineapple, and plenty of ice, this refreshing mocktail captures the classic cocktail’s beachy vibes in a family-friendly, feel-good version.

4 cups frozen pineapple

1 can full-fat coconut milk

6 oz. pineapple juice

Juice of 1/2 lime

Instructions

  1. Add coconut milk to a high-speed blender
  2. Add pineapple juice
  3. Add frozen pineapple
  4. Squeeze fresh lime juice into the blender
  5. Blend until smooth and creamy. If too thick, add a small splash of pineapple juice.
  6. Pour into a tall glass with a slice of lime and pineapple. You can also garnish with a maraschino cherry and a fun straw!

Notes

You can purchase bagged frozen pineapple or freeze fresh pineapple yourself. Use the sweetest pineapple available for the best virgin pina colada.
