This Virgin Strawberry Piña Colada is a tropical lava flow twist—an easy mocktail recipe made with creamy coconut, pineapple, and fresh strawberries.

  • One Whole Can (13.5 oz) of Full-Fat Coconut Milk - I used a canned organic brand perfect for this recipe!
  • 4 Cups Fresh Frozen Pineapple - I froze fresh-cut pineapple for a few hours. You can use frozen bagged pineapple.
  • 6 oz. Unsweetened Pineapple Juice
  • 2 Cups Strawberries - fresh or defrosted frozen berries
  • 1/2 to 1 Cup Ice

Instructions

  1. First, make the strawberry puree by blending the fresh strawberries and water in a high-speed blender until smooth. Set aside.
  2. Rinse the blender and add coconut milk, juice, frozen pineapple, and ice. Blend until smooth and creamy. If you prefer the drink looser, add a splash of pineapple juice or start with a half cup of ice.
  3. Pour an inch of strawberry puree into a tall glass. Add the pina colada mixture slowly.
  4. Garnish with pineapple slices, a fun straw, and a strawberry. Tropical umbrellas and straws are also entertaining!

Notes

  • Blend in layers: Blend the strawberry mixture separately for that signature lava flow look, then pour it over the creamy piña colada base. The red “lava” will swirl beautifully.

  • Use frozen fruit: Frozen strawberries and pineapple thicken the drink and keep it chilled without watering it down.

  • Make it kid-friendly fun: Serve in tall glasses with a straw and umbrella for a playful, vacation-at-home vibe.

  • Party pitcher version: Double or triple the recipe and serve in a big pitcher—perfect for BBQs, showers, or poolside gatherings.

 

  • Garnish glow: For a tropical finish, add fresh strawberry slices, pineapple wedges, or shredded coconut.
