Thick, spoonable, and deeply chocolatey, this Italian hot chocolate is inspired by traditional café-style cioccolata calda. A rich hot chocolate made with real chocolate.
3.5 ounces bittersweet or 70% dark chocolate, finely chopped
1 tablespoon unsweetened cocoa powder
1 cup whole milk, divided
1 tablespoon sugar
Pinch of salt
1/2 teaspoon vanilla extract
1 teaspoon cornstarch
Whipped cream or chocolate shavings, for serving (optional)
Chop the chocolate finely so it melts smoothly into the milk. Set aside in a small bowl.
Whisk cocoa powder, sugar, and salt together in a small bowl until integrated.
Slowly add 3/4 cup of milk to a saucepan. Add the cocoa powder, sugar, and salt mixture, whisking constantly until smooth over low heat.
Add chopped chocolate and whisk continuously until smooth.
Whisk cornstarch into 1/4 cup of milk until blended, then add to the chocolate mixture, stirring until melted and silky.
Serve warm, thick, and luxurious — just like an Italian café
This makes two generous servings or four smaller café-style cups. We love serving in a teacup with homemade whipped cream.
