3.5 ounces bittersweet or 70% dark chocolate, finely chopped

1 tablespoon unsweetened cocoa powder

1 cup whole milk, divided

1 tablespoon sugar

Pinch of salt

1/2 teaspoon vanilla extract

1 teaspoon cornstarch

Whipped cream or chocolate shavings, for serving (optional)

Instructions

How to Make Italian Hot Chocolate

 

  1. Chop the chocolate finely so it melts smoothly into the milk. Set aside in a small bowl. 

  2. Whisk cocoa powder, sugar, and salt together in a small bowl until integrated. 

  3. Slowly add 3/4 cup of milk to a saucepan. Add the cocoa powder, sugar, and salt mixture, whisking constantly until smooth over low heat. 

  4. Add chopped chocolate and whisk continuously until smooth. 

  5. Whisk cornstarch into 1/4 cup of milk until blended, then add to the chocolate mixture, stirring until melted and silky.

  6. Serve warm, thick, and luxurious — just like an Italian café

  7. This makes two generous servings or four smaller café-style cups. We love serving in a teacup with homemade whipped cream.

Tips for the Perfect Thick Texture

 

  • Whisk the cornstarch thoroughly before heating to avoid clumps

  • Heat slowly — rushing can cause uneven thickening

  • Stir continuously as it warms so the chocolate melts evenly

  • If it becomes too thick, add a splash of warm milk to loosen
