Ingredients

Units Scale
  • 1 cup chopped cucumber
  • 10 mint leaves
  • fresh lime juice
  • 2 tablespoons agave nectar
  • Cucumber slices for garnish
  • Sparkling water

Instructions

  1. Add the chopped, peeled cucumber to the bottom of a cocktail shaker or sturdy glass. Use a muddler to thoroughly crush the cucumber until it releases plenty of juice.
  2. Add the mint leaves on top of the cucumber and gently muddle just a few times, until fragrant. Avoid over-muddling, as this can make the mint taste bitter.
  3. Add the lime juice and agave syrup (or sweetener of choice).
  4. Pour in the sparkling water and stir until well combined.
  5. Fill the serving glasses to the top with ice, then strain the mocktail into the prepared glasses.
  6. Garnish with sliced cucumber, a sprig of fresh mint, and/or a lime wheel.
  7. Enjoy this refreshing, spa-inspired cucumber mint mocktail!
